What's inside

  • Seven working sheets in Codex order

Product description and intended use, process flow with the on-site confirmation block, hazard analysis, CCP determination, the HACCP plan, the OPRP plan and the verification schedule — all on one set of step numbers.

  • Hazard significance, calculated

Likelihood × severity against a documented, editable rule, with the justification column an auditor reads first.

  • CCP / OPRP / PRP determination

Five yes/no questions per significant hazard, answered by formula and colour-coded, with a decision-record column.

  • Verification schedule

Fourteen validation, verification and reverification activities already written, with intervals, owners and a live overdue flag.

  • Worked example across five sheets

A cooked, sliced ready-to-eat chicken breast, from product description to the finished plans with three CCPs and three OPRPs.

  • Start here and guidance

Where each Codex step lives in the workbook, the significance matrix, and the test for telling a CCP from an OPRP from a prerequisite programme.

One Excel workbook, fourteen sheets.

A hazard analysis that shows its reasoning

Sixteen hazard lines on the worked product — ten significant, six deliberately not, each with the sentence that explains why.

What you still have to do

The worked example is illustrative, not a plan you can adopt: every hazard, critical limit and control has to be determined and validated on your own product, process and legislation. Where your scheme, customer or national legislation prescribes a particular decision tree or plan format, use theirs — the reasoning in this workbook transfers. This is an independent template, not accredited training and not a food-handler or Person-in-Charge certificate.

Who it's for

Food safety and quality managers, technical managers and HACCP team leaders building or rebuilding a study — to Codex, ISO 22000, FSSC 22000, BRCGS or national food legislation.

Questions

Is it for Codex HACCP or ISO 22000?+

Both. The steps follow Codex, and the OPRP plan covers the ISO 22000 and FSSC 22000 split between CCPs and OPRPs. Where your scheme or legislation prescribes a particular decision tree or format, use theirs — the reasoning transfers.

Can the whole team use it?+

Yes. One purchase covers your organisation — every site and every user. What it doesn't cover is reselling it, handing it to other organisations or republishing it.

What if it isn't what I need?+
